Slow cooking for cold days
Pollok Country Park is on the doorstep, and a long walk deserves something that's been in the oven while you were out. The cheaper, harder-working cuts are the ones for this: lamb shanks, lamb neck, mutton on the bone and boneless beef in big chunks. Give them two or three hours and they turn tender.
Try braised lamb shanks, beef stew, Scotch broth with lamb neck, or a weekend nihari. Each recipe tells you exactly what to ask for at the counter.
The rest of the pot
Onions, garlic, ginger and fresh coriander are in every day, with seasonal veg out front. For curries and nihari, our spice range comes in small, medium and big packs, and Pakistani spices explained tells you what each one is for.
