Keep it fresh

Coriander and mint
Trim the stalks and stand the bunch in a glass of water in the fridge, loosely covered with a bag. It keeps for about a week.
Chillies
In the fridge in a paper bag, or freeze them whole and chop them straight from frozen.
Ginger
In the fridge for a few weeks, or freeze it and grate it from frozen. There's no need to peel it.
Onions and garlic
Somewhere cool, dark and dry, out of plastic bags, and away from potatoes so neither goes off early.
Tomatoes
Out of the fridge, stalk side down, for the best flavour. Soft ones are perfect for curries and sauces.
Potatoes
In a cool, dark place but not the fridge, so they don't turn green or sweet.
