Steak, and what Glasgow usually means

When someone in Glasgow says steak, they often mean the pie. That we can do: boneless halal beef in chunks for a steak pie filling. A grilling steak is a different question, and the honest answer is to ask the butcher.

The pie

A steak pie wants boneless beef in chunks of about 3cm, about 1.2kg for a pie for six, cooked slowly until a piece breaks up under a spoon. The filling is a stew you put under a lid of pastry. Our steak pie has the method, and the beef itself is on the diced beef page.

From the counterMost of the 'steak' that leaves our counter is destined for a pie, and that's a compliment.

A steak for the pan

We don't keep a cabinet of grilling steaks, and we won't pretend we do. Ask at the counter. If there's a piece that will make a steak, the butcher will say so. If there isn't, he'll say that too, and mince or a stewing chunk will still get dinner made.

If he cuts you one

Pat it dry, salt it, and get the pan properly hot. A steak this lean doesn't need long: colour on the outside, then rest it longer than feels polite. Don't keep poking it. The juices stay in if you leave it alone.

Steak questions

Do you sell halal steak?

Ask the butcher. Stewing beef and mince are what we cut every day. A grilling steak depends on what came in.

Can I make a steak pie?

Yes. Ask for boneless beef in 3cm chunks.
