Beef ribs, if the butcher has them

Beef ribs are a question for the counter, not a promise on the website. Ask at Madina Store in Shawlands. If they're in, we'll cut them for you. If they're not, we'll tell you, and lamb ribs might scratch the same itch.

Ask, don't assume

Our everyday beef is boneless chunks and fresh mince. Ribs are something to ask about. Available to order at the counter means exactly that: talk to the butcher, and he'll tell you if he can do them. We don't deliver, and we don't take a guess on the website.

How they'd want to be cooked

Same idea as lamb ribs. A beef rib rushed onto the coals stays chewy. Simmer or braise them, covered, until a knife meets no fight, then finish them hot so the edges catch. The day before is a good day to do the slow part.

Before you come

Are beef ribs always in?

No. Ask at the counter. We'll say yes or no on the day.

What if you haven't got them?

Lamb ribs, or boneless beef for a stew. Both are cut here as a matter of course.
