What's in it
A whole lamb is the lot: two legs, two shoulders, the chops and ribs, neck, shanks, and the trimmings we can mince. We buy lambs of around 18kg because that's where we find the flavour. A half is usually around 9kg. Both are sold by carcass weight, bone and fat included, not as neat boneless packs.
How to split the list
Write the dishes, not just 'lamb'. Legs for the roast, shoulder in bone-in pieces for karahi and biryani, chops thick for the grill, neck for broth, shanks left whole, and the rest minced. If you're sharing one animal between households, say whose bag is whose and we'll keep them apart.
If the list won't fitIf the list is longer than the lamb, drop the chops before you drop the shoulder. Shoulder feeds more people per kilo in a curry.
Before you come
Ask a day or two ahead, at the counter or on the order ahead page, and say when you'll collect it. We don't deliver. A cool bag matters in summer, and a whole lamb is happier in the boot than on the train at half five.
