Cooking with it
Chicken mince is leaner and milder than lamb or beef, so it's a good swap when you want something lighter. It's quick, too: a chicken keema is ready in about 20 minutes. With so little fat, add a spoon of oil or ghee to the pan and don't cook it longer than you need to.
Season it harderBe generous with the spice. Chicken mince is mild, so a keema that tastes right with lamb can taste flat with chicken.
Kebabs that hold together
It's softer and stickier than red meat mince. Chill it, wet your hands, and add a little binder: breadcrumbs, gram flour or a beaten egg. Grated onion squeezed dry, chopped coriander and green chillies add flavour without making it wet.
Try it in
Cook it through
Chicken mince always needs cooking right through, no pink anywhere: 75°C in the middle. Keep it in the coldest part of the fridge and cook it within a day, or freeze it the day you buy it.
Worth knowing
Is chicken mince lighter than lamb mince?
Usually, yes: it's much lower in fat. It also has less flavour, so season it well.
